Hi! I’m Rachelle W. — a full-time working mom of three amazing kids, lucky to have a wonderfully supportive husband by my side. Life’s been a bit of a whirlwind, especially after recently being diagnosed with Rheumatoid Arthritis. Living with a chronic illness that can be downright debilitating at times has been a journey, but one I’m navigating with a lot of love and determination.
A couple of years ago, I started exploring a dairy-free lifestyle, not just for myself, but also because all three of my kids have dietary restrictions. Let’s just say, mealtime was getting tricky! So I dove into the kitchen, experimenting and reworking some of our favorite dishes to make them dairy-free — and honestly, I’ve come to love the challenge of recreating those comfort foods we thought we had to give up.
